A key part of the production of hams and sausage is not only the spices, but also the smoking process. It is the smoking process that truly sets our premium smoked pork products apart from everybody else.

All of our hams and sausages are produced in the heart of the Cumberland Gap Mountains. The water we use comes from a nearby mountain lake known for its superb water quality. Even a backyard chef, knows the added flavor that hickory wood gives to grilled food.

At Cumberland Gap, our hams and sausages are smoked using 100% real hickory wood. Today, this smoking process may sound a little bit old fashioned, but we know this is the only way to give our hams and sausages a unique and superior taste enjoyed by everyone.
